Vintage cars, beaches and fairy woods





Yep, that was my weekend. Vintage car show, walks by the beach and cycling in the national park. Does it get much better than this?!

Healthy(ish) Cookies

Ah cookies. You're a big love of mine and quite hard to have in moderation (seriously, who can have just one?)

So I embellished a recipe I found, and they turned out excellent! See the original here.

As you can see, they're from a diabetic website, so only a small amount of sugar was used and lighter calorie/kilojule ingredients used. Sometimes eating healthier doesn't mean you have to sacrifice the taste.

Now, I didn't add the butter and rum flavoring but I did add some hazelnut meal (about 1/4 cup). For the margarine, I used only 3 tablespoons of nuttlex. I also chucked in some slivered almonds and dark chocolate chips (don't judge me).

And they were delicious.

Mocha Cookies!

Mmm...mocha. Quite possibly one of my favorite beverages. Along with a soy chai latte. And a coco mocha nut... ok so there are quite a few BUT, mocha is at the top of the list :)

So I made these little beauties :)


Here's how I did it:

1/2 cup self raising flour
1/3 cup almond meal
1/2 cup plain (wholemeal, GF, whatever you prefer)
1/3 cup packed brown sugar
1 tsp cinnamon
1 tbsp maple syrup
1 tsp ground coffee (mixed with water)
1/2 cup organic dark chocolate chips
1/2 cup butter

And, if you've read my recipes in the past you know I pretty much just chuck all the ingredients in the bowl and mix it.

After about 12-15 minutes in the oven at 180C, they should be a little springy - take them out and leave them to cool.

Family Dinner

So this weekend I have my boyfriend's parents and his siblings coming over for dinner! Mum will be making this amazing chicken coconut curry - which is freakin delish.



And then for dessert, I'm thinking a red velvet cake... Amazing huh? Recipe's below!



It's currently raining in Sydney though, and it looks like it'll be raining all weekend! So I'm planning on decorating our loungeroom all extra pretty (coz outside would have been a great dinner spot) maybe with some of these flower arrangements? (pic from abeautifulmess.typepad.com)
