Mmm...mocha. Quite possibly one of my favorite beverages. Along with a soy chai latte. And a coco mocha nut... ok so there are quite a few BUT, mocha is at the top of the list :)
So I made these little beauties :)
Here's how I did it:
1/2 cup self raising flour
1/3 cup almond meal
1/2 cup plain (wholemeal, GF, whatever you prefer)
1/3 cup packed brown sugar
1 tsp cinnamon
1 tbsp maple syrup
1 tsp ground coffee (mixed with water)
1/2 cup organic dark chocolate chips
1/2 cup butter
And, if you've read my recipes in the past you know I pretty much just chuck all the ingredients in the bowl and mix it.
After about 12-15 minutes in the oven at 180C, they should be a little springy - take them out and leave them to cool.
Voila! Hope you enjoy!
Because the glass is always half full.

Happy Easter!
Hope you all have a wonderful Easter! Whether you celebrate it or not, or just have an extra excuse to eat chocolate (ahem, me); or if you're going away with loved ones I hope it's an excellent long weekend!
And for those of you who don't like chocolate or just can't eat it - how do you celebrate? Do you make fun Easter baskets? Or buy yogurt/carob eggs or bunnies? Or get flowers? (I did, see second pic of my orange flowers!) I'd love to know!

Vegan Brownies
Wow am I a sucker for brownies. Especially gooey ones! Due to my lactose intolerance and goal of having healthier eating habits, I try and make food that I enjoy, but is also free from nasties.
So these brownies were inspired by Katie's, but I added some almond meal, used dairy free chocolate chips and used coconut dessert tofu. They're almost cake-like, but very gooey and delicious :)
